Context
Leviticus 16 describes the Day of Atonement, the most solemn day in Israel’s calendar. On that day the high priest made atonement for his own sins, his household’s sins, and the sins of the whole community. He also purified the tabernacle, the place where God dwelt among His people.

Meaning

Burning it on the altar gave the choicest portion to God, acknowledging His holiness and the seriousness of sin.

The Day of Atonement rituals pointed forward to Jesus Christ, who became the perfect and final sin offering.
